Orange Cake

Hey Hey!!

I appear to have been MIA of late...let's rectify all that with a good dose of cake yes?!?

                                                                               

                                                                             
I have posted the recipe to this before...but that's so not going to stop me from doing so yet again...this recipe is ridiculously tasty and absurdly easy it really does need to be shared amongst all...and frequently at that.....


                                                                                   


It's a good old fashioned orange cake...I love it because it's actually not TOO orangey..if you get me..although by all means throw in as much of that orange goodness as your little heart desires...even be so bold as to use the WHOLE orange..not just the suggested half..we can be crazy and daring like that around here.....

                                                                           Orange Cake

Ingredients

1 cup SR flour - sifted
1/2 cup sugar
Rind of 1/2 orange - finely grated /zest
90 grams butter - melted
2 eggs
Juice of 1/2 orange
1/4 cup milk

Method

1. Preheat your oven to about 160 degrees

2. Melt your butter

3. In a mixing bowl throw in your sifted flour, sugar and orange zest

4. Now in a jug-type-vessel pour in the melted butter, orange juice, 2 eggs and milk then give a super quick mix with a fork or whisk - if you can't stand the thought of all this hard work just bung all ingredients into the mixing bowl from the start

5. Add your liquidy ingredients to the dry ingredients and mix with your mixer (funnily enough...) for a few minutes

6. Pour cake mix into a greased/lined loaf tin (or whatever shape tin you have laying about in your tin cupboard)

7. Pop in the oven for approx 30 minutes

8. Leave in tin for a few mins once out of the oven then tip out onto a cooling rack to let cool completely

9. Smother in vanilla icing..cream cheese icing..or leave and scoff plain...I promise ALL is good!!!

Oh, and I have substituted the orange for a lemon and that is just as delish!!

Oh Oh!! ...and toss in a teaspn or so of poppyseeds too if you like...works wonderfully!!

Peanut Butter Protein Balls...

So have we all had a fabulous productive/relaxing week?? Honestly I usually get to the end of the week and may be asked by someone "so...hows your week been? What have you got up to?" And I'll stand there...mouth half open...wondering to myself...just what the heck HAVE I actually been up to??? Time flies and I never seem to sit until the evening yet I often feel I haven't accomplished nearly enough!! I'm working on this...alot...hopefully changes to come soon...:))

What I have managed to accomplish this week...as usual...is to whip up a few treats in the kitchen!! I'm currently on the look out and wanting to test run some new healthier "clean" treats for myself and the fam bam...although still baking the usual good old fashioned favourites coz hey...what's a life without cake right...

                                                                                   

Anyway...back to these little beauties...I originally saw this recipe in that little freebie food ideas mag that you can grab whilst grocery shopping at Woolworths...the ingredients looked quite "normal" as in I had everything in my pantry...and they seemed ridiculously easy to make...and sounded kind of delicious...always a bonus...

I've tweaked it a bit...of course...and really it could be switched and swapped and added to as much as one would like...but here's what I whipped up and may I say...Mmmmmm mmmmmmm!!!!!!

                                                                                 

                                                       Peanut Butter Protein Balls

Ingredients

1 cup peanut butter - crunchy or smooth
1/2 cup honey
1/3 cup chocolate protein powder
3/4 cup dessicated coconut
1/2 cup oats
1 tablspn cocoa
Vanilla - optional
Extra coconut

Method

Mix together your peanut butter and honey - lick any spoons that are spare

Throw all your other ingredients into another bowl and mix together

Add the peanut butter/honey  and mix all together - I mostly use my hands for this - it kind of needs kneading together

Now roll your mixture into small balls then roll around in the extra coconut - the balls - roll the balls - not yourself

Pop in the fridge...I also like to freeze some

Try not to eat them all in one sitting

                                                                           

These are just perfect to enjoy with a cuppa...especially in the evening when you (or is it just me??) are searching for something sweetish to enjoy...

Okay...I believe the weekend has officially arrived...let's go and do this shall we......
